This 3 Bean Vegan Chili can be made in the slow cooker on high for about 4 hours. Or, you can make it on your stove top, as I typically do. Either way, be sure to make plenty.
What is Vegan Anyway?
Well, a person who does’t eat animal products, such as meat, eggs, honey or dairy. Initially, the word vegan was defined as an animal-based foods diet. Nowadays, the new meaning of Vegan is commonly referred to non-food products. Consisting of such things as clothing, cosmetics, and medicine, that are not made with animal-derived substances.
Vegan Chili Recipe
First of all, this has been one of my kids favorite meals, especially on a cold winter day. Although, when my children became adults and wanted the recipe, so I really had to think about each step in the process and what ingredients I used. Surprisingly, I always made it a tad different, depending on what I had in the frig. Then, one day I put pen to paper and created the recipe for my girls. Thankfully, I give all the credit to my own Mother, who made her chili the same way. I hope you enjoy it as much as we all do.
Ingredients
- 1 can black beans
- corn, 1 cup corn
- 1 tbsp garlic
- green pepper (1)
- 1 can red kidney beans
- 1/4 cup jalapenos
- 1 can pinto beans
- 1/2 red onion
- 1 can roasted tomatoes
- 1 cup vegetable broth
- 1/2 tsp black pepper
- 2 tsp cayenne
- 1 tbsp chili powder
- smoked paprika 1 teaspoon
- 1 tsp Salt
