Favorite Cake Recipes

Recently, I have asked my family for their favorite cake recipes that have been handed down to them by a friend or relative. I want to be able to carry on the tradition before they get lost in time, forever.

Now that my children are adults, they appreciate those recipes, and continue to ask me to send them when they are “in the mood” for that comfort food. It warms my heart that they really did love my cooking after all. <3

So, this is where I will share all of my favorite cake recipes that I have asked my mother for. And, the very special hand written recipe cards from my grandmother. She made them special for me when I got married. This is just priceless to me! I hope you enjoy them as much as I do.

I would have posted a picture of the finished product of this cake, but my husband didn’t know that I was going to take pictures for my blog; he was hit with his sweet tooth craving. What was he thinking?! I always take pictures of my food. I’m a FOODIE…right?

Ingredients:

2 C. Sugar 2 Eggs
1 3/4 C. Flour 1 C. Buttermilk or Sour Milk
3/4 C. Cocoa 1 C. Strong Black Coffee
2 Teasp. Baking Soda 1/2 Cup Vegetable Oil
1 Teasp. Baking Powder 1 Teaspoon Vanilla Extract
1 Teaspoon Salt (I Use Vanilla Bean paste)

Directions:

Heat oven to 350. Grease two – 9 inch round baking pans, or 1 – 13 X 9 X 2 inch baking pan. Then, use dry cake mixture to flour the greased pans. This keeps the chocolate cake edge from having white spots on the edges.
Stir together sugar, flour, cocoa, baking soda, baking powder, and salt in large bowl. Add eggs, buttermilk, coffee, oil, and vanilla; beat on medium speed of mixer for 2 minutes (batter will be thin). Pour batter evenly into prepared pans.
Bake 30-35 minutes for round pans, 35-40 minutes for rectangular pan or until toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pans to wire racks. Cool completely. Frost with Mocha Frosting (or you can use any of your favorites. I used peanut butter for this one).

Mocha Frosting

3 Tablespoons Butter 1 Tablespoon Coffee Liqueur
3 Tablespoons Cocoa 1 1/2 C. Powdered Sugar
1 Tablespoon Warm Water

Melt butter in small saucepan over low heat. Stir in cocoa, water, and liqueur. Remove from heat. Gradually add powdered sugar, beating until it is of spreading consistency. Add additional warm water if needed.

I bet by now you know how much I love chocolate cake! Here is another “to die for” version of everyone’s favorite cake.

Ingredients

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1-1/2 cups unsweetened DARK cocoa powder
  • 1 tablespoon baking soda
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons salt (I use pink Himalayan)
  • 4 large eggs
  • 1-1/2 cups buttermilk (makes unbelievably moist)
  • 1-1/2 cups warm water (sometimes I use red wine)
  • 1/2 cup vegetable oil (or coconut oil)
  • 2 teaspoons vanilla extract

Chocolate Cream Cheese Buttercream Icing

  • 1-1/2 cups butter softened
  • 8 oz cream cheese softened
  • 1-1/2 cups unsweetened cocoa powder
  • 3 teaspoons vanilla extract (or vanilla paste)
  • 7 to 8 cups powdered sugar
  • approx. 1/4 cup milk

Directions

  1. Preheat the oven to 350 degrees. Coat 3 – 9 inch cake rounds with cooking spray (I use coconut oil). Dust with dry cake mixture and tap out the extra.
  2. Mix together flour, sugar, cocoa, baking soda, baking powder and salt in a stand mixer using a low speed until combined.
  3. Add the eggs, warm water, buttermilk, oil and vanilla. Mix together at medium speed until smooth.
  4. Divide the batter among the 3 pans and bake 30 to 35 minutes until a toothpick inserted into the middle comes out clean.
  5. Cool on rack completely and add frosting. I like to add to a pastry bag with a decorative tip to add flowers to the top. Then, add Hershey kisses to the center of the flowers.
  6. Enjoy!
