Vegetable Beef Lentil Mix

Ingredients:

  • 4 carrots chopped
  • 2 large sweet potato peeled and chopped
  • 2 stalks celery chopped
  • 2 cups lentils rinsed and soaked; I use brown
  • 4 medium white potatoes peeled and cubed
  • 2 cups cooked oatmeal
  • 1 lb. ground bison, save drippings for gravy
  • 1 lb. ground beef, browned, save drippings for gravy
  • 1 package (4) calves liver, browned, save drippings for gravy
  • 5 oz. kale (wilt in hot gravy)

Instructions:

  1. Bake the cubed vegetables on a olive oil greased sheet pan until tender, 350 degrees for 45 minutes.
  2. Add the lentils and water to a saucepan. Bring to a boil, then cover and simmer until the water is absorbed and the lentils are cooked. (follow package instructions)
  3. Brown the ground beef and bison until it’s no longer pink, drain drippings and set aside for gravy.
  4. Brown the calves liver separately and set drippings aside, then cube the cooled liver and set aside.
  5. Cook oatmeal according to package directions for 2 cups cooked oatmeal.
  6. Combine all drippings in separate pan and make a gravy
  7. Add the kale to hot gravy and cook until wilted
  8. Combine all ingredients into LARGE bowl to cool, then mix with your hands
  9. Store food in sealed containers in the refrigerator for up to 7 days. Or, transfer to a freezer-safe bag and freeze for up to 3 months; thaw in the refrigerator overnight.
