A Classic Cracker with a Homemade Twist
Ingredients
- 8 oz extra sharp cheddar cheese, room temperature (use the GOOD cheddar)
- 4 tbsp butter, room temperature
- 1 tsp kosher salt
- 120 g all-purpose flour
- 2 tbsp ice water
Method
- Cream the Base
Using a stand mixer or hand mixer, cream together the butter, cheese, and salt until smooth, much like you would when mixing butter and sugar for cookies. - Incorporate the Flour
Add the flour and mix for a few seconds. Scrape down the bowl, then mix again for about 30 more seconds. If the dough appears too dry or crumbly, move on to the next step. Otherwise, skip to step four. - Adjust Consistency
If needed, add ice water a little at a time and mix until a cohesive dough forms. - Chill the Dough
Divide the dough into two portions. Flatten each into a disc between two sheets of parchment paper. Refrigerate for 30 minutes to an hour to allow the dough to firm up. - Roll and Prep
Preheat your oven to 375°F. Remove the dough from the fridge and let it soften slightly. Roll it out to about 1/8-inch thickness. Carefully peel off the top sheet of parchment paper. If the dough is too sticky, return it to the fridge for another 15 minutes. Use a knife or pizza cutter to score the dough into squares, and poke a hole in the center of each cracker to mimic the classic Cheez-It look. - Bake to Perfection

Place the parchment-lined dough into the freezer for about 30 minutes. This allows you to break them apart and place on the cookie sheet to bake instead of breaking them apart after they are baked.
