Ingredients:

  • 4 carrots chopped
  • 2 large sweet potato peeled and chopped
  • 2 bunches broccoli
  • 2 cups lentils rinsed and soaked; I use brown
  • 4 cups cooked rice (follow package instructions)
  • 1 whole fresh chicken, baked, de-boned, save drippings for gravy
  • 1 lb. ground turkey, browned, save drippings for gravy
  • 2 lbs. chicken livers, browned, save drippings for gravy
  • 5 oz. spinach (wilt in hot gravy)

Instructions:

  1. Bake the chicken according to weight (I cooked for 2 hours at 350 degrees), de-bone and cube meat.
  2. Add the lentils and water to a saucepan. Bring to a boil, then cover and simmer until the water is absorbed and the lentils are cooked. (follow package instructions)
  3. Chop the carrots, sweet potato, and broccoli into bite size chunks; set aside.
  4. Brown the ground turkey until it’s no longer pink, drain drippings and set aside for gravy.
  5. Cook rice according to package directions for 4 cups cooked rice.
  6. Add carrots, sweet potato, and broccoli in Dutch oven, cover vegetables with water and cook until almost soft, drain water and add a small amount of olive oil.
  7. Add ground turkey, chicken, cubed livers, and lentils to Dutch oven with the vegetables until fully cooked.
  8. Combine all drippings in separate pan and make a gravy
  9. Add spinach to hot gravy and cook until wilted
  10. Combine all ingredients into LARGE bowl to cool, then mix with your hands
  11. Store food in sealed containers in the refrigerator for up to 7 days. Or, transfer to a freezer-safe bag and freeze for up to 3 months; thaw in the refrigerator overnight.
